Anywhoo, the other day, I made Peruvian Baked Quinoa and Cheese, which turned out quite well, if I do say so myself.
I'd change the recipe a bit. It takes about 22 minutes for the water to absorb (I assume the 3-4 minutes in the recipe is a typo), also, if I ever make this again, I'll put some cheddar cheese on the top when it bakes.
Red pepper, green pepper and leeks, chopped and ready to be sauteed.

Veggies all soft plus quinoa and garlic.

Plus water and salt.

Then it allll cooks down.

Put it in a dish with milk, eggs and cheese.

Bake it.

EAT! Mmmm, my fave part!
