Second...this is the first recipe I'll be posting on that site. I made it yesterday, and it is so, so, so good. And super easy to make, too.
Orange Cranberry Almond Cereal Bars
1/4 cup unsalted butter
5 cups mini-marshmallows
1/4 cup frozen orange juice concentrate
1 cup dried cranberries
1/2 cup sliced almonds
5 cups multi-vitamin, multi-grain cereal flakes (like Kellogg's Product 19)
1/4 cup toasted wheat germ
Nonstick cooking spray, for pan
In a 2-quart microwavable bowl, microwave butter and marshmallows on 100% power for one two minutes. Stir in the orange juice concentrate and microwave on 100% power for one minute. Stir until smooth.
In a large mixing bowl, combine the cranberries, almonds, cereal, and wheat germ. Pour the marshmallow mixture over the cereal mixture and stir until cereal is thoroughly covered.
Spritz a 9X13-inch glass baking pan with nonstick cooking spray. Spoon the mixture into the pan. With wet hands (I just used a spatula) pat the cereal evenly into the pan. Cool completely. (I refrigerated them.) Cut into bars. Eat. Yum!
