Yesterday I ran SO MANY errands. Seriously. I left my house around 11 a.m. and did not return until 10:30 p.m. (I had teacher class in the evening.) Good gravy.

Today I have cooked everything that exists. Seriously. I made:

-A dozen from scratch blueberry muffins.
-Homemade cheese enchiladas (including from scratch enchilada sauce).
-Guacamole.
-An amazing looking greek yogurt cake that once you take it out of the oven, you juice three fresh oranges over the top and let that soak in while it cools. (I haven't cut this yet, but it smells amazing.)
-Starter for fresh, from scratch bread. (This won't actually get cooked until Friday.)
-Four dozen chocolate chip cookies.
-Four dozen peanut butter, chocolate chip, honey cookies. (All eight dozen are for a meeting tomorrow.)

I have done SIX loads of dishes already today and still have a huge sink full waiting. Granted, I have the world's smallest dishwasher to begin with, but STILL!!

Now I am tired and full and everything in the kitchen is sticky. 0_0

Thank goodness I go back to work tomorrow, I'm exhausted!

This cake is so moist and flavorful, I am in loooove! I found the original recipe on a mom-blog, and she had developed it because she wanted something sweet, but with less refined sugar in it, to feed her family as a treat. I secretly thought it might need a powdered sugar glaze (what?) but it does NOT. The orange juice makes it plenty sweet and soooo yummy!
