Max and Val and I got THE COOLEST Easter care package in the mail yesterday! You have no idea how happy it made me. One problem...I don't know who it was from!! There was no note in it and the return address was just Mail Boxes Etc. So, it it was you, 'fess up! And, THANK YOU!
I got to see miss_incognito's new car yesterday! I was driving home from work and pulled up behind this gorgeous, shiny, black Trailblazer. I thought to myself "That's the kind of car Mandy just got. Wait...that's a new car. Wait...do you think? No! Couldn't be...wait. It is! It is!" It was actually Mandy, in her new car, driving down the highway! All I could do was wave and point and scream "Look at that car!!" It was gorgeous.

Preheat over to 350 degrees.
One graham cracker crust
3 eggs, separated
14 ounce can of sweetened condensed milk
1/2 cup key lime juice
One teaspoon grated lime rind (I never have this and always leave it out)
1/4 teaspoon cream of tarter
1/3 cup sugar
In a medium bowl, beat egg yolks and stir in milk. Stir in lime juice and rind. Blend well, pour into crust.
In a separate bowl, beat egg whites with cream of tarter until foamy. Gradually add sugar as you continue to beat with mixer on high until stiff but not dry. Spread meringue gently over filling, sealing carefully all the way to the edge of the crust (otherwise it will weep and get runny.) Use back of spoon to create pretty peaks and swirls.
Bake for 15 minutes or until meringue is nicely browned. Cool. Chill in refrigerator before serving.
